Jaffa Drizzle Loaf

This is a crowd pleaser. If you like Jaffa Cakes you will love this very light, moist sponge. I’ve made it for lots of cake sales and it’s always a sell out.

Personally, I’m not a fan of the chocolate orange combo which is a bit weird given that I’m sharing this recipe! But if you’re like me, you can leave the chocolate drizzle out and have a plain orange drizzle cake.

If you can’t get enough of the chocolate orange, try using Terry’s Chocolate Orange for the topping in place of the plain chocolate.

Ingredients

140g softened butter

200g self raising flour

1 ½ teaspoons baking powder

150g caster sugar

3 large eggs

6 tablespoons milk

Finely grated zest of 2 oranges

For the topping

Juice of 1 orange

50g caster sugar

50g plain chocolate

 

Method

  1. Heat oven to 180 C/ 160 C fan oven/ gas mark 4
  2. Grease and line a 2lb loaf tin or use a paper liner that are available everywhere now. These make it much easier to turn the cake out and wash the tin up once you’ve finished.
  3. Put all the cake ingredients in a bowl and beat with an electric hand whisk for 3-5 minutes until light and fluffy.
  4. Spoon the mixture into the tin, level the top and bake for 45-50 minutes until the top is firm and a test skewer comes out clean.
  5. A few minutes before the cake is due to be cooked make the orange drizzle by placing the orange juice and sugar in a pan and heat gently, stirring until the sugar is dissolved.
  6. When the cake is cooked, leave it in the tin and make holes all over it using a thin skewer or cocktail stick and spoon the orange drizzle over while it’s still warm, then allow the cake to cool completely in the tin. This will allow the syrup to soak in to the cake, keeping it lovely and moist.
  7. When the cake is completely cool remove it from the tin. Break the chocolate in to small pieces and melt in a bowl over simmering water.
  8. Drizzle the melted chocolate over the cake with a spoon. Allow the chocolate to set before cutting in to slices to serve.
